Vegan "Chicken" Burger

This is one of our favorites when we feel like burgers! These vegan "chicken" burgers, made with chickpeas, are flavor bombs with a delicious crunchy outside especially topped with lettuce, tomato and red onion! You have to try them, we're sure they will become one of your favorites too!

They're very easy to make. Make a bunch and freeze them in the freezer so that you can grab them for a quick meal anytime!

How to Imitate the Taste of Chicken 

These are a list of spices that are typically used in recipes to season chicken. Using these or a mix of them will help you obtain similar flavors.

Will it taste like chicken?

No this doesn't taste exactly like a chicken breast. But we can assure you that it is crispy and salty, and full of flavor that will give you a very similar experience. You will get a similar mouth feel and if you accompany it with French fries and all the toppings that you like, you will not miss the breast of that poor chicken. 

Instead of trying to recreate everything about a sandwich made from a chicken body; this is a whole food full of protein and fiber that will fill you up and be something you are sure to enjoy.

Do I have to fry and bake it??

No, you can choose one or the other, but frying the patty before cooking it through in the oven will ensure that you get a crispy crunchy outside and will, of course, add flavor.

You can however cook them off completely in the oven. It will also be tasty and a bit healthier.

Can I freeze the patties?

Yes you can freeze the patties for up to 3 months.

Once cooked and cooled freeze the patties on a tray until they are mostly frozen through and then wrap them individually to freeze in bags or airtight containers and store for up to 3 months in the freezer. 

¿How should I reheat the burgers? 

You can reheat the burgers in the oven for about 8 minutes at 400 degrees Fahrenheit, or heat them with or without oil in a frying pan for a few minutes on each side. You can thaw first or reheat from frozen and cook for a few extra minutes. 

Can I make them gluten free?

Sure! Try using another coagulant like flaxseeds or mashed sweet potato but prepare for them to be much more fragile and maybe fall apart while you eat it. The wheat gluten really gives the burger it's hold. 

Use gluten free bread crumbs, crackers, or almond flour. 

Substitutions 

I haven't tried this recipe with other beans, but I´m sure that any other medium sized white bean, like navy or butter beans, would work just fine! 

Make Your Own Bread Crumbs


One of the best things to do to avoid waste, is to use bread that is a few days old and starting to dry out and make your own breadcrumbs. I use a box grater or my blender to grind up old bread to save for recipes.

Can I just throw everything into a food processor?

You for sure can use a food processor, but I find that using a fork and a little elbow grease is the best way to control the texture, and it's fun to get your hands in and knead. 

Serving Suggestions 

We recommend serving the burgers on a bun with lettuce, and tomato. And try out our Alioli Sauce!, barbacoa, una salsa picante como Tabasco, guacamole o mayonesa vegana.  Cebolla roja también es un buena adición.

Ingredientes
  

Para la Hamburguesa

  • 650 grams Cooked Garbanzo(Chickpeas) (24 Ounces)
  • 1 Cup Bread Crumbs Thicker Bread Crumb like Panko
  • ½ Cup Vital Wheat Gluten Gluten Flour
  • Cup Bread Crumbs finer bread crumb
  • 1 tablespoon of Extra Virgen Olive Oil
  • Cup Vegetable Stock
  • 2 8 Tablespoons Soy Sauce light soy sauce or Tamari
  • 3 8 Tablespoons Chickpea Flour (optional for breading)
  • 1 Cup All Purpose Flour (optional for breading)
  • 1 tablespoon Poultry Seasoning I used Old Bay Seasoning, any other Chicken(Poultry) Seasoning will work (See the Subheading "How to Imitate the Taste of Chicken)
  • ½ teaspoon Salt to Taste
  • Pinch of Black Pepper
  • ½ tablespoon Thyme
  • ½ tablespoon Garlic Powder
  • ½ tablespoon Onion Powder
  • ½ tablespoon Nutritional Yeast
  • 3 8 Tablespoons Vegetable Oil for frying (optional for breading)

For the Sandwich

  • Hamburger Buns
  • Lettuce
  • Tomatoes

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit (200 degrees Celsius)
  • Add drained chickpeas to a large bowl. Mash them with a fork or potato masher.
    Make sure they are completely smashed - we don't want any whole chickpeas. Don't worry about the skin, it will add a lot of texture to our burger.
  • Once it is well mashed you can add the rest of the ingredients, the oil, soy sauce, vegetable broth, spices, the wheat gluten, and ⅓ of the breadcrumbs (the other cup we will use to bread the burgers later)
  • Mix with a fork until everything is well combined and then use your hands to knead for 2 or 3 minutes.
    The mix should become firmer and come together easily. (To cook without frying see the instructions "Oven Instructions")
  • Mix 3 tablespoons of Chickpea Flour with ½ cups of water.
    Beat until everything is integrated and has the consistency of a beaten egg.
  • Pour the rest of the bread crumbs (1 cup) onto a plate and and season with a bit of nutritional yeast and garlic powder.
  • Place the patty in the chickpea "egg".
  • Cover the burger with flour
  • Take it out and put it back in the chickpea egg
  • Finally, dip the patty in the chickpea egg wash once again and coat it with breadcrumbs.

Frying Instructions

  • Fry the burgers in hot oil until golden brown on both sides.
  • Once they are golden brown, remove them from the oil and place the burgers on a baking tray to finish cooking in the oven for 20 minutes at 400°, turning each of them to the other side after 10 minutes.
  • While they are cooking, toast your burger buns and prepare your toppings.
  • When the burgers are finished, add lettuce, tomato your choice of sauce and serve on a bun.

Oven Instructions

  • Bread the patties with the remaining cup of bread crumbs, you may have to press them in so that they are covered completely.
  • Place the patties on a baking sheet and cook for 30 minutes at 400° Fahrenheit.
    Turn each patty after 15 minutes so that they cook evenly until they are crunchy, crispy, firm and golden brown.
