The Spanish Tortilla is from my land, from my roots, from times when famine forced men and women to invent something to eat in order to survive. The famous potato was borrowed from the Incas, but today it is undoubtedly a reference point for Spanish gastronomy.
It is one of the most popular or typical foods in the country. No matter in which province you are (whether further south or north) you can always enjoy its taste.
Yes, it's one of the most requested tapas in cafes, bars, the most requested food by kids at home and, of course, known worldwide by the millions of tourists who visit Spain every year.
You can eat it on toast, in a sandwich, on a skewer, alone or with aioli (garlic mayonnaise); soft or firm; cold or hot; with or without onions. There is always the controversy of whether it is better with or without onions; I am one who likes a lot of onions, but I'll leave it up to you.
This potato omelette (tortilla) is ideal for breakfast in the middle of the morning, at lunch, as a snack, or for dinner. In fact, any time of day becomes an excuse to enjoy this recipe full of flavor and tradition.

I have countless memories of snacking on the beach "Bocadillo de Tortilla de Patatas", it's like a tradition. The tortilla has always satisfied the hunger that comes with hours of playing paddle-ball, volleyball and swimming on the beach. That's why every time I make a tortilla, it takes me back to those moments I'll never forget.
So with those memories in mind, here I bring you a new version of the typical Potato Omelette hecha Vegana (also gluten-free).
One day when I took it in to work my colleagues couldn't believe that it didn't have egg in it. They looked at me over and over again and said: "It's impossible for this to be egg-free! And, another day when I left it in the fridge and went out to do some shopping, my brother and sister-in-law almost left me without a piece thinking that it had an egg in it and that I had cooked it for them. Ha, ha.

TORTILLA DE PATATAS VEGANA (sin gluten)

- Sarten
- espatula
- Plato plano grande
- Bol
- Varilla mezcladora
Ingredientes
- 1 kilo Papa Blanca (para freir)
- 8 Cuch Harina de garbanzo
- 1 Taza Agua
- 2 Cuch Aceite de oliva o girasol
- 1 Pizca Curcuma
- 1 Cucharita Salt to Taste
Instructions
- Pelamos la papas y la cortamos en cuadraditos y la ponemos en un bol para darle un enjuagon y quitarle tal vez tierrita que quede en la papas y escurrimos
- En una sarten antiadherente ancha (26cm) echamos la cuchadara de aceite y esperamos a que se caliente.
- Cuando veamos que el aceite este templado volcamos las papas y le agregamos la sal (al gusto) y lo movemos bien. Poner el fuego a media temperatura para que no llegue a quemarse las papas.
- Cocinarlas lentamente hasta que esten medio fritas/ medio cocidas.
- Mientras se van haciendo las papas, picamos la cebolla en cuadraditos pequeños. Despues de que las papas se cocina unos minutos, agregamos la cebolla a la sarten y envolver todo bien.
- ¡CUIDADO! No queremos echar la cebolla demasiado pronto que se queme y la papa se quede dura, ni demasiado tarde para que la papa se haga y la cebolla se queda cruda.
- Keep cooking the potatoes until they are soft. If at any point you see the potatoes start to stick, add 1/5 cup of water. We use water so we don't go overboard with the oil and keep it healthier.
- Mientras tanto en un bol o cuenco hondo hacemos la mezcla que sustituira al huevo. Echamos la harina de garbanzo, y despues agregar 1 1/2 vaso de agua, anadir la pizca de curcuma y sal.
- Mover todo bien con una barrilla para que se vayan cualquier grumo de la harina y reservar hasta que las papas estan hechas.
- Una vez que las papas estan frita o medio cocidas las sacamos de la sarten ayudandonos con alguna espatula de madera o algo que no ralle la sarten y las incorporamos al bol que tiene la mezcla que sustituye en huevo. Con la espatula envolvemos todo bien.
- Acto seguido volcaremos la mezcla con las papas a la sarten de nuevo. Asegurate que la sarten queda limpio de cualquier resto de papas o cebolla.
- Ahora toca darle forma a la tortilla. Usando la espatula ve redondeando todos los bordes. Bajamos el fuego un poco para que cocine lento lo de adentro y no queme lo de afuera.
- Cocina por 5 minutos hasta que se queda dorado. Con la espatula dale de nuevo forma redondita a la tortilla. Cocina tambien este lado por 5 minutos hasta que este dorado.
- Para darle vuelta a la tortilla colocas un plato llano y grande boca abajo encima de la sarten. Con una mano coges el plato y con la otra el sarten. Con un giro de muñeca rapido le das la vuelta a la sarten dejando arriba la parte cocinada y abajo la que meteras de nuevo en la sarten.
